this is kind of a fancy name for chicken in the crock pot. i have no idea what makes it 'alla cacciatora' but it is kind of fun to say. i found it on the sandra lee website. click on the link to go to to the original recipe. i know there are mixed reviews when it comes to sandra lee but i'm a big fan of her philosophy for cooking. i don't feel a need to make everything from scratch. i like canned goods and frozen veggies because they make my life easier. king louie and i split a family pack of chicken breast in half and i knew that the other half would be perfect for this recipe. this is what i used and what i did:
what you need:
1. 1 pound(ish) chicken breast
2. one 28 oz can of whole peeled tomatoes
3. 8 oz of sliced baby bella mushrooms
4. four ribs of celery
5. handful of frozen pearl onions
6. one can of cream of mushroom soup
7. one cup of vegetable broth
8. 1 tbsp all purpose seasoning
9. steam in the bag rice
what you do:
place all ingredients in the crock pot and put it on low for 8 hours. serve over your rice. sandra lee suggests pasta and i don't disagree. i served mine with a frozen mix of corn, carrots, green beans and lima beans. king louie mixed it all together. i ate it separately.
this recipe was pretty good. i didn't need a knife to cut the chicken and i liked all the veggies. the recipe called for one and a half pounds of chicken. we didn't have that much so there was definitely more broth left over than chicken. we estimated that what we made would feed about four people. the recipe didn't set my world on fire but it is always nice to have something different. a girl can't live on pop tarts and frozen burritos alone.
