my grandma was one of those people who sparkled. she was funny and a great cook and threw great parties and made it look so easy. i feel blessed to have some of her recipes. one of which she affectionately named 'idiot casserole'. (sidenote: she also has a dessert recipe called 'the next best thing to robert redford'. you get the idea of what kind of nut she was) i have a little bit of talent in the kitchen but don't have a lot of motivation on weeknights. as a result i am a big fan of the crockpot. i try and use it once a week. i love how the house smells when i get home from work. so, i managed to dumb down 'idiot casserole'.
what you need:
chicken breast (about a pound)
can of cream of mushroom soup (or what ever creamed soup gets you going)
onion (i use frozen chopped. this is where the idiot part comes in)
paprika
pepper
what you do:
throw the above in the crockpot and let it go for about 8 hours on low.
what you serve it with:
right before i serve it up i add canned mushrooms because i'm a huge fan. i serve the chicken over steam in the bag rice. we've experimented with the different varieties and they all seem to work well. i also steam the frozen veggie mix that has corn, carrot, green beans and lima beans because it all tastes good when all mixed together.
my husband and i each eat dinner and then there's about a meal's worth of leftovers. my husband takes it for lunch served over pasta and gets compliments from his officemates.
so, feel free to be an idiot like me and make 'idiot casserole' in the crockpot on a night where you're pressed for time.
i'll get cracking on 'the next best thing to robert redford' and let you know how it goes. though personally i am more of a paul newman kind of girl.
